When I played on maplesea’s actual server, the event shops usually extends an extra 1-2 weeks after the end of event so players can have enough time to complete their event purchases, and also prevents players from “forgetting” to redeem and thus losing that whole event worth of coins.
Oh I wasn’t sure, sorry! 7th anniversary is my first major event in Royals xD the forum notice didn’t mention the extension of shop, though! Would be nice to include for awareness
We usually would just leave the exchange open until the next patch when we remove the NPCs (unless it's originally supposed to be there, like Mr. Moneybags in Henesys where we'll just disable the exchange script). Hope this answers your question.

Does that include the anniversary puzzle quest? I was wondering if I can stall that out and turn it in maybe 1 or 2 weeks later.
Unfortunately we won't be proceeding with re-enabling chair gachapon after discussion with the team as the NPC did state that exchange will be closed after the event ends. Sorry about that! Quest expiry is hardcoded (as far as I can remember) so there's no way to extend it without a patch. It's currently set to end at the expected date.
