Having not played in years, I forget a lot of the little things. I'm aiming for the Bandit Job Advancement in the long run. No idea where I should be funneling my AP after levelling. When I used to play, we'd just pour everything evenly into LUK and DEX. Just hoping that maybe someone has a more strategic method.

If you're just thinking about how much AP you should be putting your abilities in, just put it all in Luk until level 70. At level 70, you'll be using Meso Explosion to train and the damage of Meso Explosion is not reliant on your damage range so just hoard all of your AP until you have a decent plan to spread out your AP.
So after I bring my DEX to 25 for the thief Job Advancement, I should just put everything into LUK until level seventy. Wont having that low a DEX stat mess with my equips throughout the next few months of levelling? Or does DEX not usually play a big role?
Dex is only necessary for equipment wielding essentially, and since Maple weapons (with 0 Dex requirement) are aplenty here and level 64 ones are available here also, you have enough weapons to last you till level 70 when you use ME to train. Adding Luk maximizes your damage output as a dit.
Like @yiks said, Dex is only for wearing end game equips and nothing more. Just get yourself a Bathrobe scrolled with Luk and use that until you're ready for late game gear like a Zakum Helmet or a high total stat Top and Bottom.
