So Twitch doesn't just have a system that clears VODs in the beginning of every month. I'd like to know more about this clean up they did to your channel to where only your 7/1 and later VODs appeared.

Twitch does not delete your VODs if there is copyrighted music in certain segments. What they do is private your VOD (it's still accessible to you in your Content tab) and you are free to make it public again. The new public version of your VOD will have certain segments of the detected copyrighted music muted. Even in the email you provided, in the last paragraph, they tell you to "review the on-demand videos" they detected. In that same email they even gave you a link to the VOD that was muted by them so you can watch it yourself, they don't delete them.
You would have had to manually delete that video yourself which means your statement about the system deleting your videos before July 1st was a lie.

The content was not striked, it was preemptively muted. If the content was striked and you received a strike for it, then the VOD has the potential of being deleted by Twitch. You can see on your account you have 0 copyright strikes which leads us to believe that Twitch did not remove your streams until after the 14 day window passed. That article is also from 2020 and Twitch has made a few changes to their VOD storage system since then but what I mentioned above is the way they handle it today. It is your choice to delete the VOD if you are afraid of being DMCA'd in the future. We do not believe your story about your VOD being deleted so I would advise you to find the main of the user that gave you all of those scrolls.
