With the dismounting, is it required every hit? Or just before the ship is about to break. So eg, if it has 200k hp, you just dismount after 50%

you dismount before you take a hit so the ship doesn't take damage
in Zakum i dismount for 1/1 but i tank the thunder+seal attack because it doesn't deal much damage, 1/1 on sair is very dangerous as you can take high damage if you don't dismount

It depends on your level, how long the fight is, and whether bosses have 1/1s, so I can't give an accurate answer. It's really a "feel" that you'll have to gauge from doing the fights.

The general rule is you need to dismount all attacks from early 4th job (Lv. 120-140), since your ship has so little HP. It literally crumbles if you don't.

Once you go past those levels, you'll have so much ship HP that you can facetank everything on ship without it breaking for ages. At that point you can time when your ship breaks by dismounting only at low ship health.
So long as your downtime doesn't eat into your buff pots (eg. appos) you're good; you want to spend as little time using Rapid Fire as possible.

If I use Krex as an example:
A Lv. 135 ship can't survive more than a few minutes unless you dismount attacks.
At Lv. 165 you can stay on ship for the whole fight and it might only break right before the boss dies (so literally like 25 mins).
I usually get my ship to flashing health (almost breaking) and just dismount everything till my appo runs out.

You ALWAYS need to dismount 1/1s since they'll typically be the most damaging boss attacks for your ship.
