    I see a lot of servers v83, v62, etc.
    Why specifically these versions?
Do they encompass the Golden Age of Maplestory within them?
    Are they just stable versions?
Do they have specific content up to that point that everyone enjoys, but going further would ruin the game?

You know I am not actually very sure. I prefer versions that are much much older though. Curious what the answers might be.

Each server has a source which is the combination of files that make up the server, including scripts(npcs, portal, quests, events, reactors) with every update comes changes so that means the source would have to constantly change, I guess when it comes down to it, it's easier to have a common couple versions since it would be more difficult to have a source for every single update, you'd need a custom source, custom wz files and custom localhost which is a lot of work and not to forget coding the source in Java which is a ton of work in general. The very first version which Odin used was v.55 which lacked a bunch of the content in v.62 (obviously) and again how v.62 lacks the content in v.83, there are also a few v.75 sources but less popular (not sure why). So I guess the most popular versions are the major benchmarks in Maple's timeline, content-wise.

0.62 is popular because it's an "old-school" version that has the pirate class installment and is limited to explorers only.

0.83 is also common because it has some new stuff (kerning city mall, neo city...) but not some potentially problematic stuff (the potential system, big bang, etc....)

Source code for some versions is also apparently (somehow) more accessible as well... which also probably plays a part aside from just content
A detailed list can be found here http://www.basilmarket.com/MapleStory-Guide-What-Came-When-in-GMS-283.html on basilmarket.

The reason is, that not every single version had a big contect updage, so before V62 all private servers were on V55 (not sure why I was too young) then after 60 version (V62) there was finally a new job! everyone was very exicted and when it came out in V62 there were V62 servers along with V55, then the next biggest updage of contect was V75 which never got too much succes for somereason and same thing with V83, since then u see versions like V88(dual blade and evan),V90,V93(bigbang),V97 and so on.

In Mapleroyals's case Matt the owner really love the old gameplay so he choost V62 because it's a very low version but still very popular, not like V55 which since V62 servers came out noone play it anymore because they very similair but V62 is much better with alot of fixes and pirave which is still very nostalgic :)!

There's a lot of people who prefer pre-bb MS over post-bb.
    I honestly don't care whether it's v62 or v83 or v90. As long as it's low rate, pre-bb, and stable, I'm good.
